Operational business entities

My wife, Alex, is a realtor in Albuquerque who is also doing a lot of transaction coordinating and personal assistance to other realtors in her office. I am currently in a W-2 job in residential new construction, but am about to test for my contractors license to start up my own side business, which will handle renovations for clients and our personal flips. We also just bought our second home and are in the process of renovating it before we rent out our first. I understand the importance of owning and operating the rental out of its own LLC separate from our operational income entities, but how do I set up our operational LLC’s (and names) for ease of tax prep? My current thinking is to setup an LLC under my wife’s name for ease of payment, much like Mark has MarkJKohlerinc, and then a separate LLC for my business under whatever name is chosen. But could this be simplified into one LLC with a DBA attached so that we combine income and save sooner with an s-corp conversion? In summary, how do you structure your operational businesses foundation to make it easy to keep growth organized?
